- 1 tablespoon Olive Oil
- 1 medium yellow onion, chopped
- 3 carrots, peeled and chopped
- 3 stalks of celery, chopped
- 4 garlic cloves
- 2 teaspoons turmeric
- 2 teaspoons cumin
- 1 teaspoon smoked paprika
- ⅛ teaspoon red pepper flakes
- 1 cup lentils (color by choice)
- 4 cups broth (preferable: homemade vegetable broth)
- 2 cups spinach, kale, or whatever greens you choose
- 1 14 oz can coconut cream
Get a large pot and heat up the oil. Saute the diced onions for 3 minutes. Next, add the carrots and celery, and saute them until you notice that they have softened. When they do, add the garlic and spices, lentils and broth. Boil the entire mixture on reduced heat for about 30 minutes. In the end, add the greens and coconut cream and stir everything together.
