Vegan patties are an Italian delicacy. Today they are present on almost every menu, and you may be better known as veggieburger or veggie fritters. This delicious and light meal is made from vegetables and gluten-free almond or coconut.

Ingredients for about 30 small patties:
1 onion
1.5 cm of fresh ginger or 1 teaspoon of ginger powder
2 carrots
100 g of bean
200 g of chickpea
1 handful broccoli
50 g of almond or coconut
2 tablespoons of tapioca flour
1.5 teaspoon of himalayan salt

Preheat oven to 180 ° C and place the baking paper on a baking pan in which you will bake patties. In a food processor, chop finely and mix with the onion, carrot and ginger. In the meanwhile, cook the chickpeas if you do not use the one of the can. Cook the bean with chick peas. When the water boils, remove the bean and it’s membrane. Boil the broccoli also in a pot with chick peas and bean. Remove the pot for about 7-10 min after the water boils. Finally, in a food processor, add the remaining ingredients – bean, chickpea and broccoli. Mix until all the chickpeas completely are disintegrated into mush. Then stir in the flour, tapioca flour, salt and baking powder. With your hands shape the balls of desired size. Cook the patties for about 25 minutes or until they take golden color. Serve them with cooked quinoa , tomato sauce, pesto or Milanese sauce. Also excellent are served with avocado and roasted mushrooms, carrots and other seasonal vegetables and with a little tahini spread.
