4 Green onions – finely sliced
50g of finely sliced of grated root ginger
2 cloves of garlic – peeled and finely diced
7 cups of vegetable stock
1 finely diced medium-hot chili
Mushrooms are optional
Method:
Put the onions, garlic, (mushrooms) and ginger in a bigger saucepan and carefully saute on a low heat for a couple of minutes. Add the stock and bring to the boil. Simmer until all the ingredients go soft. Add the chopped chili and simmer for an additional 5 minutes before serving with warm, crusty bread and a glass of lemon water (to boost digestion and accompany some anti-bacterial nutrients to your meal).
